Grilled Chicken Garden Green Salad


Servings: 2

Ingredients:
2 chicken breasts
4 cups of leafy green lettuce, chopped
2 roma tomatoes, diced
1/2 red onion, sliced thin
1/2 cup of artichokes (not in oil)
1 tablespoon of EVOO
1/2 tablespoon of red wine vinegar

Season chicken and grill until cooked through.

Meanwhile, toss veggies in EVOO and red wine vinegar until coated.  Serve sliced chicken on salad.

Chicken Fajitas and Black Beans


Servings: 2

Ingredients:
2 chicken breasts
1 green bell pepper
1/2 white onion
1/2 can of black beans, rinsed
1 tablespoon of EVOO
Seasoning of your choice, sans salt

Season chicken and grill until cooked through.

Meanwhile, sautée bell pepper and onion in olive oil until tender.  Serve peppers and onions over chicken with a side of warm black beans.

Spaghetti Squash with Turkey Meat Sauce

Servings: 2

Ingredients:
1 large spaghetti squash, halved and cleaned
1 lb of lean ground turkey
3 cloves of garlic
2 tablespoons of EVOO
1 jar of fresh marinara sauce (refrigerated)
1 handful of fresh parsley for garnish
salt and pepper to taste

Set your oven to 350.  Slice spaghetti squash in half and clean inside.  Drizzle a tablespoon of olive oil on each side and sprinkle with sea salt and pepper.  Put squash face down on a greased cookie sheet and bake.

Meanwhile, in a saucepan, sautee garlic and olive oil for a few minutes.  Add turkey, sea salt, pepper and stir.  Cook on low until turkey is almost done.  Add marinara sauce and let simmer.

Serve meat sauce over spaghetti squash and garnish with fresh chopped parsley.

Baked Tilapia with Black Bean Salsa and Sweet Potato

Servings: 4

Ingredients:
4 tilapia fillets
1 tablespoon of EVOO
1 can of black beans, rinsed
1 handful of sweet yellow corn
1/2 red onion, chopped
1 avocado, chopped
1 handful of cilantro, diced finely
chipotle seasoning
4 small sweet potatoes

Preheat oven to 350 and bake sweet potatoes in tin foil.

In a baking dish, drizzle EVOO over tilapia fillets and sprinkle chipotle seasoning to taste.
Add to oven after potatoes have been cooking for about 1 hour.

Meanwhile, in a medium bowl, combine and stir remaining ingredients.

Serve black bean salsa over fish, with sweet potato as a side.   The chipotle flavor of the fish goes REALLY well with the sweet potato!



Egg White Scramble with Veggies and Black Beans

Servings: 2

Ingredients:
8 egg whites
1/2 red bell pepper, diced
1/4 cup red onion, diced
1 roma tomato, diced
1 handful of fresh spinach
1/2 can of black beans, rinsed

In a pan coated with cooking spray, sautée vegetables until tender.  Add scrambled egg whites.  Add black beans and cook on low until eggs are done.

Stuffed Chicken and Spaghetti Squash



Servings: 2

Ingredients:

For chicken:
2 chicken breasts, tenderized and sliced in half
4 tablespoons of greek yogurt
3 cloves of garlic, chopped
4 large handfuls of fresh spinach
2 teaspoons of garlic powder

For spaghetti squash:
1 large spaghetti squash, cut in half and cleaned
2 tablespoons of EVOO
dash of salt and pepper

Set your oven to 350.  Slice spaghetti squash in half and clean inside.  Drizzle a tablespoon of olive oil on each side and sprinkle with sea salt and pepper.  Put squash face down on a greased cookie sheet and bake.

Meanwhile, in a saucepan, sautee your chopped garlic in 1 tablespoon of EVOO.  Add spinach and stir every few minutes, until wilted.  Turn down to low, and add yogurt.  Stir until mixed thoroughly.  Stir in garlic powder and add some salt and pepper to taste.
Spoon mixture in between chicken breast slices.  Bake on 350 until chicken is done, about 30 minutes.

When chicken is done, remove spaghetti squash, also.  With a fork, scrape the sides.  Serve chicken on a bed of squash.  Voila!
